Handmade noodles are a traditional dried noodle made primarily from wheat flour, water, and salt, through a series of purely handmade processes including kneading, resting, rolling, coiling, fermentation, stretching, and drying. Handmade noodles have a long history, dating back to the Tang Dynasty, when they were called "Xumian"
Even today, they are known by various names in different regions, such as "Dragon Beard Noodles" , "Hollow Noodles" , and "Silver Thread Noodles" .
Their core characteristic lies in the unique fermentation and multiple stretching processes that create a fine, hollow structure within the noodles, making them easy to flavor, resistant to overcooking, and possessing a smooth yet chewy texture. Handmade noodles are mainly distributed in northern China and parts of southern China, such as Shaanxi, Gansu, Sichuan, and Anhui, and have developed distinct local varieties and production techniques over a long period.
